The "modern C" is most likely the 9.5" radius C neck used on the current American Standards. A "C" shaped neck thai is not "modern" could refer to any number of C shaped necks - typically a 7.5" radius - for example on a '60s Custom Shop Stratocaster usually called vintage radius. So modern vs vintage is one difference. I'm realizing more and more how much I love the Modern C neck shape. I've been playing my American Standard for almost 30 years now and just got a 2017 American Professional Series Strat that, according to Fender's site, has a Modern "Deep C" neck profile. Comparing both, the Modern "Deep C" is just a tad bit thicker than the former. The new neck starts with a modern "C" shape at the neck and morphs into a modern "D" shape as you get towards the heel.

Many people, however, simply use the letter "C" when referring generally to these "oval" shapes. The "U" shape is chunky and rounded, with high shoulders, as seen in the exaggerated letter U.
